Sweet Salsa



15 c diced tomatoes
4 c chopped red peppers (can use green peppers)
3 c chopped onions
3 fresh jalapeno peppers including the seeds
2 c white vinegar
3 c canned jalapeno slices (chopped)
1-2 can sliced olives (drained)
1-2 can sweet corn (drained)
5-6 garlic cloves chopped
2 pkgs. knox gelatin
4-5 c sugar
2 cans tomato paste

Mix all ingredients in large pot and simmer until somewhat thick (1-2 hours). Pour in hot mason jars and process in water bath for 10 minutes.
